One of my favorite side dishes for our holiday meals… baked corn. It’s rich, sweet, and delicious… and such a “fancy” way to serve this common veggie.
- 2 – 15 oz. cans creamed corn
- 1 Tbsp. butter
- 7 eggs
- 7 Tbsp. sugar
- 2/3 c. evaporated milk
- Preheat oven to 325 degrees.
- Beat eggs, sugar, and evaporated milk.
- Mix in butter and corn to combine. Transfer to a casserole dish (13×9 appx.).
- Bake for 1 hour. Cut into squares and serve warm.
